UKIYO 浮世 Junmai Daiginjo Sake (Limited Release)

Originally crafted exclusively for our esteemed trade partners, we are delighted to now offer this exquisite sake to our patrons on a limited basis.

Elegantly produced by refining Miyama Nishiki rice from Miyagi prefecture to a 28% polish rate, this stunning Junmai Daiginjo boasts a delicate and supremely refined character, complemented by a hint of umami and a lingering finish.

Master brewer (toji) Morikawa-san discovered his passion for sake-making at the tender age of 14 and has since dedicated his life to the art. While embracing a creative and unorthodox approach, as evidenced by sake labels inspired by The Clash's 'London Calling' album and another influenced by the UK band The Pogues, Morikawa-san remains steadfastly committed to the labour-intensive practice of koji production. Utilising futa koji (small batches in shallow wooden trays) for all their sake, the brewery has recently achieved vegan certification and is actively pursuing organic certification.
